Leek and Potato Soup

2 large (and I mean large!) leeks, sliced
3 potatoes, chopped
1 large carrot, sliced
1 pint vegetable stock
1 pint milk

Put all ingredients in a pan, bring to the boil, reduce heat and simmer for 20 minutes. Blend, season and serve.

Serves 4.
