Garlic and Broccoli Soup

1 head garlic, chopped
2 onions, chopped
1 tbsp olive oil
1 can cannellini beans, drained
2 heads broccoli, chopped into florets
1.2l vegetable stock

Fry the garlic and onion in the oil until soft. Add the beans, broccoli and stock and simmer for 20 minutes. Blend, season and serve.

Serves 3.
